Crunchy Peanut Butter Fudge
|Instant nonfat dry milk powder||2⁄3 Cup (10.67 tbs)|
|Chunky-style peanut butter||1⁄4 Cup (4 tbs)|
|Raisins||1⁄4 Cup (4 tbs), chopped|
|Frozen unsweetened concentrated apple juice||8 Teaspoon (2 Tablespoons Plus 2 Teaspoons)|
|Ice water||2 Tablespoon|
|Oven toasted rice cereal||3⁄4 Ounce (Ready To Eat)|
|Shredded coconut||4 Teaspoon, lightly toasted (1 Tablespoon Plus 1 Teaspoon)|
In small bowl combine milk powder with peanut butter, blending thoroughly; stir in raisins, apple juice, and water.
Add cereal and stir until combined.
Press mixture into 7 3/8 x 3 5/8 x 2 1/4-inch nonstick loaf pan; sprinkle with coconut and, using back of spoon, press coconut into mixture.
Refrigerate until firm, about 2 hours.
