Pork Stir Fry With Vegetables And Peanuts
|Pork sirloin cutlet/Boned fresh ham steak||3⁄4 Pound, cut in 1/2-inch cubes|
|Vegetable oil||6 Tablespoon|
|Green onions||6 , trimmed and chopped|
|Celery stalks||2 , cut on the diagonal into 1/2-inch slices|
|Mushrooms||1⁄2 Pound, sliced|
|White vinegar||3 Tablespoon|
|Soy sauce||1⁄4 Cup (4 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Crushed dried red pepper||1 Pinch|
|Roasted unsalted peanuts||1⁄2 Cup (8 tbs)|
1. Put the cornstarch into a large bowl and toss the pork cubes in it until coated. Heat 4 tablespoons of the oil in a heavy 12-inch skillet over moderately high heat for about 1 minute. Add half the pork and cook, stirring, for 5 minutes. Using a slotted spoon, remove the cooked pork to a platter. Heat the remaining 2 tablespoons of oil in the skillet and cook the remaining pork.
2. Add the onions, celery, and mushrooms to the skillet and cook stirring, for 1 minute.
3. In a small bowl, combine the sugar, vinegar, soy sauce, water, and dried red pepper. Pour the mixture into the skillet and cook, scraping up any brown bits stuck to the skillet, for 1 minute, or until the liquid thickens slightly.
4. Return the pork to the skillet, add the peanuts, and toss until heated through.
