Chicken Noodle Salad With Spicy Peanut Butter

Ingredients
  Canned chicken breast chunks 12 1⁄2 Ounce (1 Can)
  Creamy peanut butter 6 Tablespoon
  Rice vinegar 3 Tablespoon
  Soy sauce 3 Tablespoon
  Sugar 1 1⁄2 Tablespoon
  Asian sesame oil 1 Tablespoon
  Minced peeled fresh ginger 1 Tablespoon
  Cayenne pepper 1⁄2 Teaspoon
  Linguine 8 Ounce
  Orange bell pepper 1 Large, cut into matchstick size strips
  Chopped green onion 1⁄2 Cup (8 tbs)
  Lettuce leaves 5 Large
  Fresh cilantro 1⁄4 Cup (4 tbs), chopped
  Salted peanuts 1⁄4 Cup (4 tbs), chopped
Directions

1. Drain chicken, reserving broth.
2. Combine 1/4 cup of the reserved broth, peanut butter, vinegar, soy sauce, sugar, sesame oil, ginger and cayenne in a small bowl; whisk to blend.
3. Cook linguine in a large pot of boiling salted water until tender. Drain pasta, rinse with cold water and drain again.
4. Transfer pasta to a medium bowl. Add chicken, bell pepper and green onions. Pour dressing over; toss to coat.
5. Line a serving bowl with lettuce leaves. Transfer salad to the prepared bowl. Sprinkle with cilantro and peanuts.
