Stuffed Peaches

Ingredients
  Unflavored gelatin 2 1⁄2 Tablespoon
  Water 1⁄2 Cup (8 tbs)
  Canned peach halves 29 Ounce (1 can, No. 2 1/2 size)
  Peach juice 2 Cup (32 tbs)
  Sugar 1 1⁄2 Cup (24 tbs)
  Lemon juice 3⁄4 Cup (12 tbs)
  Lime juice 3 Tablespoon
  Cream cheese 8 Ounce (1 package)
  Mayonnaise 1 Tablespoon
  Finely chopped walnuts 1 Tablespoon
Directions

Soften gelatin in water.
Drain canned peaches and reserve juice.
Add sufficient water to juice to make 2 cups.
Pour peach juice and sugar into a saucepan and bring to a boil.
Add gelatin and stir until dissolved.
Remove from stove and add lemon juice and lime juice.
Measure liquid and add sufficient water to make 4 cups.
Chill until liquid begins to thicken.
Soften cream cheese with mayonnaise and shape into individual 1 inch balls.
Roll balls in chopped walnuts and place inside peach halves.
Allow 1 peach half per serving.
Place stuffed peach halves in individual molds and pour 1/2 cup of thickened gelatin mixture over each mold.
Chill until firm.
