Caramelized Peaches And Pears

I love preparing these caramelized peaches and pears for dessert for both family and parties as a dessert. Fresh and juicy, these caramelized peaches and pears are easy to prepare and have the natural sweetness of fruit accentuated by cream and sugar. chilled and broiled, this peach and pear dessert is a favorite of mine.
Ingredients
  Dessert pears 1 Large
  Fresh peach 1 Large
  Demerara sugar 3 Tablespoon
  Double cream 4 Fluid Ounce
  Castor sugar 2 Teaspoon
Directions

Peel and core the pear, and peel and stone the peach.
Cut the fruit into bite size pieces and arrange in a small shallow oven proof dish.
Cover the fruit completely with the demerara [light brown] sugar and place the dish in the freezing compartment of the refrigerator for 15 minutes.
Preheat the grill [broiler] to very hot, then place the dish containing the fruit underneath it until the sugar starts to caramelize.
Allow to cool, and if made ahead of time, place the dish in the main body of the refrigerator to chill.
Whip the cream lightly with the castor [fine] sugar and serve with the caramelized fruit.
