Stuffed Peach Halves

Ingredients
  Peaches 4 Medium, peeled, halved, and seeded
  Lemon juice 1 Tablespoon
  Flaked unsweetened coconut 2 Tablespoon, toasted
  Raisins 2 Tablespoon
  Chopped almonds 2 Tablespoon, toasted
  Grated lemon rind 1⁄2 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Low fat vanilla yogurt 2 Tablespoon
  Honey 2 Teaspoon
  Vanilla extract 1 Teaspoon
Directions

Coat peach halves with lemon juice, and set aside.
Combine remaining ingredients; stir well.
Spoon about 1 tablespoon mixture into cavity of each peach half; chill.
