Stuffed Peaches

Ingredients
  Peaches 4 Large
  Lemon juice 2 Tablespoon
  Raisins 1⁄4 Cup (4 tbs), chopped
  Honey 1 Tablespoon
  Vanilla extract 1 Teaspoon
  Lemon rind 1 Teaspoon, grated
  Ground cinnamon 1⁄2 Teaspoon
  Low fat yogurt 1⁄3 Cup (5.33 tbs)
Directions

MAKING
1) In a saucepan boil water and scald peaches for 1 minute to loosen the skin.
2) Drain out the peaches. Peel off, halve the peaches, and remove pits.
3) Baste with lemon juice.
4) Using a grapefruit spoon or melon scoop, scoop out half of the pulp from each peach. Preserve the sturdy shell.
5) Baste the insides of the shells with lemon juice.
6) Cut the pulp and keep aside.
7) In a small bowl mix raisins, honey, vanilla, lemon rind, and cinnamon.
8) Mix the reserved peach pulp.
9) Stir enough yogurt to bind the stuffing together.
10) Separate stuffing among the peach halves.

SERVING
11) Serve immediately.
