Peach And Red Pepper Relish

  Hot red peppers 2
  Sweet red peppers 12
  Peaches 12 (Adjust Quantity As Needed)
  Salt 1 Tablespoon
  Lemons 2 , sliced 1/4 inch thick, seeds removed
  White vinegar 1 Cup (16 tbs)

Chop peppers finely or use processor.
Chop peaches by hand.
Combine all ingredients and boil for 1/2 hour.
Remove lemon and add 6 cups sugar.
Boil 1/2 hour stirring constantly.
Pour into sterilized sealers.
Preserves such as this relish make welcome contributions to home bake sales, instead of the usual cakes or cookies—if you can bear to part with it!
