|Shredded lettuce||1⁄4 Cup (4 tbs)|
|Ripe firm tomatoes||2|
|Grated pineapple||3 Ounce (grated coarsely)|
|Uncooked green peas||2⁄3 Cup (10.67 tbs) (very tender quality)|
Pour boiling water over the tomatoes, leave a minute, then drop them into cold water.
Slip off their skins and chop up the pulp, removing the seeds.
Allow to drain for about 10 mins.
before using, then mix with peas and pine- apple.
Add just enough mayonnaise to moisten.
Halve the peaches, selecting large ones, if possible.
Remove their stones and peel the halves.
Fill the hollows with the salad mix- ture, piling it high.
