Fresh Peach Tapioca

Ingredients
  Water 1 1⁄2 Cup (24 tbs)
  Quick cooking tapioca 1⁄4 Cup (4 tbs)
  Sugar 5⁄8 Cup (10 tbs)
  Salt 1⁄4 Teaspoon
  Ripe peaches 1 1⁄2 Cup (24 tbs), peeled and diced
  Lemon juice 2 Tablespoon
  Almond extract 1⁄8 Teaspoon
  Coffee cream/Whipping cream 1 Tablespoon
Directions

Heat water to boiling in top of double boiler over direct heat.
Mix tapioca, sugar and salt and slowly add to water, stirring vigorously.
Continue to stir constantly over direct heat until mixture comes to a full boil; then place over boiling water and cook 5 minutes with occasional stirring.
Add peaches and lemon juice, cover and cook 5 minutes longer.
Remove from heat, add almond extract and cool.
