Spicy Pickled Peaches
|Cinnamon stick||6 (4 Inch Each)|
|Whole allspice||1 Tablespoon|
|Whole cloves||2 Tablespoon|
|Ginger root piece||1|
|Cider vinegar||1 Quart|
|Sugar||8 Cup (128 tbs)|
|Peaches||6 Pound (4 Quarts, Medium Firm Ones)|
Tie spices loosely in a cheesecloth bag and boil with vinegar, water, salt, and sugar for 10 minutes.
Add peeled whole peaches, a few at a time, and simmer until tender.
When all are done, remove spice bag.
Pack peaches into hot sterilized jars, and fill with boiling syrup; seal.
