Spiced Peach Butter

Ingredients
  Peaches/4-1/2 pounds frozen sliced peaches 18 Medium, sliced (ripe, peeled)
  Water 1⁄3 Cup (5.33 tbs)
  Sugar 4 Cup (64 tbs)
  Ginger 1 Teaspoon, ground
  Nutmeg 1 Teaspoon, ground
Directions

In a large kettle, cook peaches in water until tender.
Press through a sieve or process in a food processor.
Measure 8 cups pulp; return to kettle.
Add sugar, ginger and nutmeg.
Cook and stir over medium heat until thickened, about 30 minutes.
Immediately ladle into hot jars, leaving 1/4-in.
headspace.
Adjust caps.
Process for 10 minutes in a boiling-water bath.
