Spiced Peach Crunch
|Fresh peaches||8 Medium, peeled and cut into 1/2 inch thick slices|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Peach brandy||2 Tablespoon|
|Lemon juice||2 Tablespoon|
|Regular oats||3⁄4 Cup (12 tbs), uncooked|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Firmly packed brown sugar||1⁄4 Cup (4 tbs)|
|Reduced calorie margarine||1⁄4 Cup (4 tbs), cut into chunks and chilled|
|Unsweetened shredded coconut||3 Tablespoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Freshly grated nutmeg||1⁄4 Teaspoon, freshly grated|
Combine first 5 ingredients in a large bowl; toss well.
Let stand 20 minutes, stirring occasionally.
Position knife blade in food processor bowl; add oats.
Pulse 3 or 4 times.
Add flour and remaining ingredients; pulse 4 or 5 times or until mixture resembles coarse meal.
Place peach mixture in an 11- x 7- x 2-inch baking dish; sprinkle oat mixture evenly over peaches.
Cover and bake at 400° for 15 minutes; uncover and bake an additional 30 minutes or until peaches are tender and oat topping is crisp.
