Layered Peach Dessert
|Low calorie gelatin||3 Ounce (1 Envelope, 4 Serving Size, Lemon / Raspberry Flavored)|
|Boiling water||3⁄4 Cup (12 tbs)|
|Cold water||3⁄4 Cup (12 tbs)|
|Canned peach slices in juice||16 Ounce, drained and cut up (1 Can)|
|Evaporated skimmed milk||1⁄4 Cup (4 tbs), chilled|
|Almond extract||5 Drop (Adjust Quantity As Needed)|
Dissolve gelatin in boiling water.
Stir in cold water.
Add 1 cup of the gelatin mixture to peaches; chill till partially set.
Chill remaining gelatin till partially set (consistency of unbeaten egg whites).
Add evaporated skimmed milk and almond extract to partially set gelatin without peaches.
Beat till fluffy.
In 6 parfait glasses layer the two gelatin mixtures, ending with whipped gelatin.
Chill thoroughly before serving.
