White Peaches With Caramelized Sugar
|White peaches||6 , blanched, peeled, halved and stoned|
|Brandy||3 Fluid Ounce|
|Double cream||1 Pint, stiffly beaten|
|Soft brown sugar||4 Tablespoon|
Preheat the grill [broiler] to high.
Place the peaches in a flameproof serving dish.
Sprinkle over the brandy and set aside for 10 minutes.
Using a flat bladed knife, spread the cream over the peaches, making sure the surface is flat.
Sprinkle over the sugar.
Place the dish under the grill [broiler].
Grill [broil] for 1 to 2 minutes or until the sugar has melted and formed a very dark brown crust.
Remove the dish from under the grill [broiler] and serve immediately.
