Oven Baked Peaches With Ginger
|Firmly packed brown sugar||3⁄4 Cup (12 tbs), divided|
|Peaches||6 Medium, peeled and halved crosswise|
|Minced crystallized ginger||2 Tablespoon|
|Light rum||1⁄2 Cup (8 tbs)|
Sprinkle half of sugar in a 12 x 8 x 2 inch baking dish; dot with 2 tablespoons butter.
Place peaches on top of sugar and butter; sprinkle with ginger.
Pour rum over peaches; place cherry in center of each peach half, and sprinkle with remaining sugar.
Dot with 1 tablespoon butter.
Bake at 350° for 20 minutes.
Spoon two peach halves and syrup into individual serving dishes.
