Peach Apricot Whip
|Dried apricots||3⁄4 Cup (12 tbs)|
|Dried peaches||3⁄4 Cup (12 tbs)|
|Lemon juice||1 Tablespoon|
|Grated lemon rind||1 Teaspoon|
|Honey||1 1⁄2 Tablespoon|
Cover dried fruit with water, bring to a boil and simmer ten minutes.
Drain and reserve liquid for use another time.
Use blender or puree utensil.
Add lemon juice and rind.
Beat egg whites with salt until stiff.
Pour honey into egg white mixture gradually while continuing to beat.
Then fold egg white mixture into pureed fruit mixture carefully, using an over and under motion with a wire whisk or rubber spatula.
