Petits Pois Francais

Ingredients
  Peas in pod 4 Pound, shelled to make 4 cup (Fresh Ones)
  Lettuce 2 Cup (32 tbs), shredded
  Green onions 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Water 1⁄2 Cup (8 tbs)
  Butter/Margarine 4 Tablespoon (1/2 Stick)
  All-purpose flour 2 Tablespoon
Directions

MAKING
1. Take a large saucepan and add 3 tbsp of margarine or butter in it and cook peas, green onions, lettuce, water, salt, pepper and boil it by covering. Cook on low heat for 10 minutes until the peas are soft.
2. Take a cup add 1 tbsp margarine with flour to make a paste.
3. Stir the paste into pea mixture, adding a small at a time. Cook until the mixture thickens and boils for an additional minute.

SERVING
4. Serve the Petits Pois Francais in hot serving bowls after topping with mint sprigs.
