Caspian Split Peas
|Stock||4 Cup (64 tbs)|
|Tomatoes||2 Large, diced|
|Carrots||2 , thinly sliced|
|Shredded cabbage||1 Cup (16 tbs)|
|Split green peas||1⁄2 Cup (8 tbs)|
|Barley||1⁄2 Cup (8 tbs)|
|Garlic||2 Clove (10 gm), minced|
|Minced fresh parsley||1⁄4 Cup (4 tbs)|
1) In a pot, combine together the stock, tomatoes, carrots, cabbage, split peas, barley and garlic.
2) Bring to a boil, cover and simmer for about 1 1/4 hours, or until the barley is tender.
3) Stir in the parsley, mash all ingredients.
4) Serve hot.
