Green Peas Bonne Femme

Ingredients
  Butter 2 Ounce
  Onion 1 , sliced
  Lettuce 1 , shredded
  Salt 1⁄2 Teaspoon
  Sugar 2 Teaspoon
  Marjoram sprig 1
  Thyme sprig 1 Small
  Parsley sprigs 3
  Peas/12 ounce packet frozen peas 2 Pound
  Water 1⁄2 Cup (8 tbs)
  Butter 2 Teaspoon
  Plain flour 1 Teaspoon
Directions

MAKING
1) Into a saucepan, put 2 ounces of butter.
2) Add the lettuce, salt, onion, sugar, herbs and peas. Mix well and then add the water.
3) Bring the mixture to a boil, cover the pan and cook for about 25 minutes or till the peas are just tender.
4) Remove and discard the herbs.
5) Blend together 2 teaspoons of butter and the flour. Stir the mixture into the peas.
6) Put the pan back on the heat. Keep shaking to roll the peas around till the butter-flour mixture and the liquid have combined well.
7) The moment the mixture starts to boil again, take it off the heat.

SERVING
8) Serve hot.
