Southern Black Eyed Peas And Tomatoes

Ingredients
  Dry black eyed 2 Cup (32 tbs)
  Water 6 Cup (96 tbs)
  Tomatoes 2 Large, chopped
  Paprika 1 Tablespoon
  Garlic 3 Clove (15 gm), pressed
  Oil 2 Tablespoon
  Onion 1 Large, diced
  Cayenne 1⁄4 Teaspoon
  Cumin 1 Tablespoon
Directions

MAKING
1) In a saucepan, add peas and water.
2) Bring it to a boil for 5 minutes.
3) Cover with a lid and simmer for 1 hour.
4) Add tomato, onion, paprika, cayenne, garlic, cumin and oil.
5) Cover with a lid and simmer for 2 hours, by occasional stirring.

SERVING
6) Serve the preparation by garnishing with fresh coriander, if you wish.
