Stir Fried Sugar Snap Peas

Ingredients
  Sugar snap peas/Snow peas 3⁄4 Pound
  Peanut oil 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Sugar 1⁄2 Teaspoon
Directions

GETTING READY
1) Under cold running water, was the peas after stringing them. Drain and use paper towels to thoroughly dry the peas. Alternatively, the drying can also be done in a salad spinner.

MAKING
2) Place a wok or skillet over high heat and for about a minute, heat it. Add the peanut oil and keep heating till the oil is hot enough but not smoking. Bring the heat down to medium and then add the sugar and salt. Stir for a few seconds.
3) Add sugar snaps or the snow peas and stir fry continuously for about 1 minute. Take the peas out and on a serving platter, arrange them around the chicken. If desired, the peas can be arranged like spokes of a wheel.

SERVING
4) Serve hot.
