Southern Style Black Eyed Peas

Ingredients
  Dried black eyed peas 1 Pound, washed
  Bacon piece/Salt pork 1⁄4 Pound, cut into 1 inch cubes (1 Slice)
  Water 1 1⁄2 Quart
  Salt 1 Tablespoon
  Cayenne pepper 1⁄4 Teaspoon
Directions

MAKING
1. In a large Dutch oven or a kettle, add peas, bacon, and water
2. Cover with lid and place on a medium low flame.
3. Simmer peas for 2-2 1/2 hours until soft.
4. Season with salt and pepper

SERVING
5. Serve hot along with potatoes to accompany roasts or grilled meats.
