Split Pea Croquettes
|Split peas||1 Cup (16 tbs)|
|Boiling water||2 1⁄2 Cup (40 tbs)|
|Freshly grated nutmeg||1 Pinch|
|Minced onions||2 Tablespoon|
|Egg||1 , beaten|
|Whole wheat bread slice||1 , broken into soft crumbs|
|Raw wheat germ||1⁄2 Cup (8 tbs)|
Gradually drop split peas into boiling water, making certain water continues to boil.
Reduce heat, cover, and simmer 25 minutes or until peas are tender.
Preheat oven to 350°.
Drain (reserving liquid) and place peas in blender or a sieve.
Puree and add butter, nutmeg, onion, egg, and bread crumbs.
If the mixture won't hold together, add a little of the reserved cooking liquid.
Form into oblong patties and roll in wheat germ.
Chill if necessary.
Place on well greased baking sheet and bake for about 5 minutes; turn and bake another 5 minutes or until lightly-browned.
Croquettes may also be fried until browned.
