Wash snow peas; trim ends, and remove strings.
Cut snow peas in half diagonally; set aside.
Heat margarine in a large nonstick skillet over medium-high heat until margarine melts.
Add gin gerroot, and stir-fry 1 minute.
Add sliced carambola, and stir-fry 3 minutes.
Add snow peas, sliced pear, apple juice, sugar, and salt; stir-fry an additional 3 to 5 minutes or until snow peas are crisp-tender.
Transfer mixture to a small serving bowl, and serve immediately.
