Black Eyed Peas
|Black-eyed peas||1⁄2 Pound, soaked for 4 hours and drained|
|Yellow onion||1 , peeled and chopped|
|Crushed red pepper flakes||1 Teaspoon|
|Smoked ham||1⁄2 Pound, cubed|
Place all the ingredients in a pot, and do not quite cover with water.
Simmer, covered, for about 30 minutes, or until tender
