  Black-eyed peas 1⁄2 Pound, soaked for 4 hours and drained
  Celery stalks 2
  Yellow onion 1 , peeled and chopped
  Crushed red pepper flakes 1 Teaspoon
  Smoked ham 1⁄2 Pound, cubed
  Salt To Taste
  Pepper To Taste
Directions

Place all the ingredients in a pot, and do not quite cover with water.
Simmer, covered, for about 30 minutes, or until tender
