Stuffed Snow Peas
|Snow pea pods||2 Dozen (Fresh Or Frozen)|
|Whipped cream cheese||3⁄4 Cup (12 tbs), softened|
|Orange juice||2 Tablespoon|
|Prepared horseradish||1 1⁄2 Teaspoon|
|Freshly ground pepper||1⁄8 Teaspoon|
|Finely grated orange rind||1 Tablespoon|
Thaw snow pea pods, if frozen.
Trim ends from snow peas; place in a steaming basket.
Plunge basket into boiling water, and remove immediately.
Place snow peas in a ice water to cool quickly.
Remove from water, and refrigerate.
Combine cream cheese, orange juice, horseradish, and pepper; stir until smooth.
Chill at least 1 hour.
Using a sharp knife, carefully slit one side of each snow pea.
Spoon cream cheese mixture into decorating bag fitted with tip No.18.
Pipe about 1 1/2 tea spoons cream cheese mixture into each snow pea.
Sprinkle with grated orange rind.
Refrigerate until ready to serve.
