Basic Retes Pastry

  Flour 10 Ounce
  Lard 1 Teaspoon
  Egg 1
  Salt 1 Pinch
  Water 4 Fluid Ounce (1 Gill)

You will need a large kitchen table on which to pull out pastry.
Sift flour onto pastry board and knead well with lard, pinch of salt, 1 egg, and 1 gill lukewarm water.
Make a loaf of the paste, cover it with a warmed dish or basin and let it stand for about 20-25 mins.
Cover the table with a clean cloth, flour it well, place the dough in middle, brush it with a little lukewarm lard, and roll it out with rolling pin to a finger's thickness.
Flour your hands, place them under the paste, pulling it gently and evenly towards the sides of the table till the paste reaches the thinness of tissue paper.
Tear off thick edges of the dough, let dry for a few mins., sprinkle with lard, spread with filling prepared beforehand, roll up into a roly poly with the help of the tablecloth.
Place into a greased baking pan, brush with egg or lard, bake in a hot oven till crisp and golden brown.
