Basic Savory Short Pastry
|Self rising flour||4 Cup (64 tbs)|
|Butter||1⁄2 Cup (8 tbs), softened|
|Vegetable shortening||1⁄2 Cup (8 tbs)|
|Freshly grated parmesan cheese||1 Cup (16 tbs)|
|Freshly ground pepper||1⁄4 Teaspoon|
|Cold water||1 Cup (16 tbs)|
Sift flour into mound on clean working surface.
Shape into large ring; form high wall.
Place butter, vegetable shortening, cheese, salt, and pepper in center of ring; add half the water.
Work up center mixture with 2 table knives; use cutting motion.
Carefully work in flour from inside of ring; add more water if needed.
Mix until all flour is added and dough holds together; gather dough into ball.
Place in bowl; cover with towel.
Refrigerate at least an hour.
Can be wrapped securely in plastic wrap or aluminum foil and stored in refrigerator for a week.
