This Hot Water Crust Pastry comes in handy for a lot of sweet and savory pie and pastry recipes. Try out the Hot Water Crust Pastry with your favorite filling let me know the filling that it goes best with!
  Plain flour 3 Cup (48 tbs)
  Salt 1 Teaspoon
  Milk and water 1 Cup (16 tbs), mixed
  Lard 4 1⁄2 Ounce

Sift flour and salt into a mixing bowl and place in a warm oven to warm the flour.
Place milk and water with the lard into a small saucepan and bring to the boil slowly.
Pour mixture, whilst bubbling, into the warmed flour and mix with a wooden spoon until the dough leaves the sides of the bowl clean.
Work and shape pastry quickly, rolling first piece out on a floured board while remainder is kept warm in a bowl covered with a cloth.
If pastry is allowed to cool too much it cracks and is difficult to handle.
