Ingredients
  Plain flour 3 Cup (48 tbs)
  Salt 1 Teaspoon
  Milk and water 1 Cup (16 tbs), mixed
  Lard 4 1⁄2 Ounce
Directions

Sift flour and salt into a mixing bowl and place in a warm oven to warm the flour.
Place milk and water with the lard into a small saucepan and bring to the boil slowly.
Pour mixture, whilst bubbling, into the warmed flour and mix with a wooden spoon until the dough leaves the sides of the bowl clean.
Work and shape pastry quickly, rolling first piece out on a floured board while remainder is kept warm in a bowl covered with a cloth.
If pastry is allowed to cool too much it cracks and is difficult to handle.
