Nothing starts a school day off better than a warm homemade apple strudel. Traditionally these are made with Phyllo pastry, but I love the simplicity of using puff pastry. In under 30 minutes you can go from concept to plate, making your mid week breakfasts a favorite all season long. I am using Stemilts world famous fruits in this recipe, their family run farm and commitment to sustainable farming makes this dish all the more delicious.

Fuji apple | 2 , thinly sliced | |
Raisins | 1/2 Cup (8 tbs) | |
Brown sugar | 1/4 Cup (4 tbs) | |
Juice of lemon | 1 | |
Cinnamon | 1 Teaspoon | |
Melted butter | 2 Tablespoon | |
Cinnamon sugar mixture | 2 Tablespoon (((sprinkle on top))) | |
For dusting | ||
Icing sugar | 2 Tablespoon (((as needed))) |
GETTING READY
1. Preheat oven to 375 degree F.
2. Line a baking sheet with parchment paper and set aside.
3. Peel, slice and core apples.
MAKING
4. In a mixing bowl, place apple slices along with the lemon juice, raisins, sugar and cinnamon. Fold the ingredients until fully coated.
5. On lined baking sheet, place and cut puff pastry sheet into 4-inch squares or any shape you like.
6. Top each sheet of pastry with the apple mixture, leaving space along the edge.
7. Then top with a layer of puff pastry. Taking care to pinch the edges together and seal in the apple blend.
8. Using a knife, cut a steam vent in the center of each top layer and then gently coat with the melted butter.
9. Sprinkle cinnamon sugar mixture on top.
10. Bake for 20-30 minutes, or until golden brown. Once cool enough to handle, sprinkle with icing sugar.
