Quick Puff Pastry

Ingredients
  Butter 1 Cup (16 tbs), chilled
  All purpose flour 22 1⁄2 Tablespoon
  Cake flour 1⁄2 Cup (8 tbs)
  Salt 1⁄4 Teaspoon
  Iced water 1⁄2 Cup (8 tbs)
Directions

MAKING
1) Using a knife, cut the butter into 3/8 inch cubes
2) Place in the freezer for about 10 minutes to chill
3) Mix together the flour and salt
4) Into the flour mixture, make a well and place the chilled butter
5) Using a pastry cutter cut the butter into the flour to break down to quarters
6) Add in sprinkled water evenly to the mixture to moisten
7) Using the hands, shape the dough into a well
8) Cling wrap or wrap the dough the wax paper
9) Place in the refrigerator for 15 minutes to chill
10) Onto a floured surface, roll out the dough to a rectangle of 3/8 inch thickness
11) Fold in the shorter sides towards the center and fold in half
12) Roll out dough again into 3/8 inch thickness

SERVING
13) The dough will fit a 9 inch pie dish
