Rich Pie Pastry
|All purpose flour||225 Gram (2 Cup)|
|Butter||175 Gram (3/4 Cup)|
|Egg yolk||1 (Mixed With 2 To 3 Tablespoons Ice Water)|
Sift the flour and salt into a bowl and add the butter.
Cut it into small pieces with a knife, and then lightly work it into the flour with your fingertips until the mixture resembles coarse bread crumbs.
Add the egg and water mixture and mix it in, adding a little more water if necessary.
Give the dough a quick, final mix with your fingertips.
Shape into a ball, cover and chill.
