Rich Pie Pastry

Ingredients
  All purpose flour 225 Gram (2 Cup)
  Salt 1 Pinch
  Butter 175 Gram (3/4 Cup)
  Egg yolk 1 (Mixed With 2 To 3 Tablespoons Ice Water)
Directions

Sift the flour and salt into a bowl and add the butter.
Cut it into small pieces with a knife, and then lightly work it into the flour with your fingertips until the mixture resembles coarse bread crumbs.
Add the egg and water mixture and mix it in, adding a little more water if necessary.
Give the dough a quick, final mix with your fingertips.
Shape into a ball, cover and chill.
