Dessert With Puff Pastry
|Plain white flour||8 Ounce (225 Gram)|
|Unsalted butter||8 Ounce (225 Gram)|
|Squeezed lemon juice||1 Dash|
Preheat the oven to Gas 7, 425°F, 220°C, 15 mins before baking.
Sieve flour and salt into a bowl.
Rub 1 oz/25 g butter into flour, then mix to a soft dough with lemon juice and about 3-4 tbsp chilled water.
Shape remaining butter into an oblong.
Roll dough out to an oblong, three times as long as butter.
Place butter in centre of dough.
Bring top third down over butter and bottom third up.
Seal edges lightly with a rolling pin.
Wrap and leave to rest in fridge for 30 mins.
Place the dough with sealed edges at top and bottom, then roll, fold and relax the pastry.
Repeat process once more, then leave to relax in the fridge for at least 3 hrs before using.
