|Margarine/Butter||1 1⁄2 Ounce|
|Plain flour||2 Ounce|
|Cheese||1 1⁄2 Ounce, finely grated|
|Egg yolks/Milk||1 (To Mix)|
Rub the margarine or butter into the flour, then add the cheese and plenty of seasoning.
Make a firm dough with egg yolk or milk.
Use this pastry for tiny biscuits which you can top with ham, smoked salmon, etc., for boat shapes, you can buy special shaped tins in cocktail size, or for cheese straws.
Always bake the cheese pastry in a very hot oven (450°F - Gas Mark 7) and cool for a few minutes on the baking trays as it is very brittle.
