Rich Cheese Pastry
|Plain flour||4 Ounce|
|Dry mustard||1 Teaspoon (Leveled)|
|Butter||2 1⁄2 Ounce|
|Cheese||2 Ounce, grated|
|Cayenne pepper||To Taste|
Sieve the flour and seasoning together, rub in the butter, add the cheese and bind with the egg yolk.
If necessary add a very little water.
Roll out and use for savoury flan or tartlet cases or to make cheese biscuits or straws.
If baking by itself, use a hot oven (450°F - Gas Mark 7).
Handle carefully when hot as it is very brittle.
