Rich Shortcrust Pastry

Ingredients
  All purpose flour 8 Ounce (225 Gram, 2 Cups, Plain)
  Salt 1 Pinch
  Chilled butter 5 Ounce, diced (150 Gram, 10 Tablespoon)
  Egg yolk 1
  Chilled water 30 Milliliter (2 Tablespoon)
Directions

1. Sift the flour and salt into a large bowl. Rub or cut in the butter until the mixture resembles fine breadcrumbs.
2. Mix the egg yolk and water together. Sprinkle over the dry ingredients and mix in lightly to form a soft dough.
3. Gather the dough together into a ball. Knead on a floured surface until smooth. Wrap in clear film (plastic wrap) and chill for 30 minutes before using.
