Sweet Shortcrust Almond Pastry
|Unsalted butter||150 Gram|
|Plain flour||250 Gram|
|Ground almonds||30 Gram|
|Icing sugar||90 Gram|
|Egg||1 , beaten|
Rub the butter into the flour with your fingertips until you have a light, crumbly mixture.
Add the ground almonds and icing sugar, then the egg and salt, and mix lightly to obtain a smooth, evenly textured dough.
Chill in the refrigerator for several hours (12 hours if possible).
Preheat the oven to 180°C (350°F), gas mark 4.
Roll out the pastry to a thickness of 3 mm / 1/8 inch and use to line a flan dish, 22 cm / 8 1/2 inches in diameter and 2 cm / 3/4 inch deep.
Prick the pastry base with a fork.
Bake in the preheated oven for 20-25 minutes then remove and leave to cool.
