Orange flavored Pastry

|All purpose flour/Unbleached flour||1 Cup (16 tbs)|
|Orange peel||1 Tablespoon, grated|
|Shortening/1/3 cup lard||1⁄3 Cup (5.33 tbs) (plus 1 tablespoon)|
|Cold water||3 Tablespoon|
Mix flour, orange peel and salt; cut in shortening until particles are size of small peas.
Sprinkle in water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl.
