Basic Jerk Paste

Ingredients
  Scotch bonnet peppers 24
  Scallions 6 , finely chopped
  Allspice 1⁄2 Cup (8 tbs)
  Chopped thyme leaves 8 Teaspoon (Use Fresh Variety)
  Pepper 2 Teaspoon
  Salt 4 Teaspoon
  Packed brown sugar 1⁄4 Cup (4 tbs)
  Fresh lime juice 1⁄2 Cup (8 tbs)
  Nutmeg 1 Tablespoon
  Cinnamon 1 Tablespoon
Directions

Wearing rubber gloves, remove the stems from the Scotch bonnet peppers.
Place the peppers in the container of a food processor and pulse several times.
Add the scallions and pulse several more times.
Add the allspice, thyme, pepper, salt, brown sugar, lime juice, nutmeg and cinnamon and pulse until the marinade becomes a paste.
