Minted Pea Puree

Ingredients
  Chopped fresh mint 1⁄4 Cup (4 tbs)
  Shelled peas 1 Cup (16 tbs) (1 pound pods)
  Water 3⁄4 Cup (12 tbs)
  Skim milk 1 Tablespoon
  Freshly ground black pepper 1⁄8 Teaspoon
Directions

Put the mint, peas, and water in a small saucepan and bring to a boil over medium heat.
Simmer for 10 to 15 minutes, uncovered, until the peas are easily mashed with a fork.
Drain and transfer the solid ingredients to the bowl of a food processor or blender and puree until smooth.
Return the mixture to the saucepan over low heat.
Whisk in the milk and pepper and heat through, about 1 minute.
Serve immediately.
