Red Pepper Puree
|Sweet red pepper||To Taste (roasted and peeled)|
|Garlic||1 Clove (5 gm), minced|
|Hot pepper sauce||1⁄4 Teaspoon|
In food processor or blender, process red pepper, garlic, salt and hot pepper sauce until smooth. Transfer to small bowl. (Puree can be covered and refrigerated for up to 2 days. Bring to room temperature before swirling into soup.) Makes about 1/2 cup (125 mL).
