Green Pea Puree
|Unsalted margarine||2 Teaspoon|
|Green onions||2 , sliced|
|Yellow onion||1 Small, sliced|
|Dried split green peas||3 Tablespoon, rinsed|
|All purpose potato||1 Small, peeled and sliced|
|Mint flakes||1⁄2 Teaspoon|
|Water||1 1⁄3 Cup (21.33 tbs)|
|Frozen green peas/1 1/3 10 ounce package frozen green peas||1 Cup (16 tbs)|
In a medium size heavy saucepan, melt the margarine over moderate heat; add the green onions and yellow onion and cook, uncovered, until soft about 5 minutes.
Mix in the dried peas, potato, mint, sugar, and 1 cup of the water; cover and cook, stirring occasionally, for 30 minutes.
Add the fresh peas and the remaining water if the vegetables look dry; cook, covered, for 5 minutes.
Remove from the heat.
In a food processor or electric blender, puree the mixture for 30 seconds or until smooth.
