Pears With Raspberry Puree
|Water||1 Cup (16 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Ripe pears||3 , peeled and halved|
|Frozen raspberries||10 Ounce, Defrosted (1 Package)|
|Blanched silvered almonds||1 Cup (16 tbs)|
1. Combine one and one-half cups each water and sugar and boil five minutes. Add the vanilla and pears and simmer until the fruit is tender. Drain and chill.
2. Combine the raspberries with one tablespoon sugar. Mix the cornstarch with two tablespoons cold water and combine with the raspberries. Simmer three minutes and mash through a sieve. Chill and add kirsch to taste.
3. Spoon over the pears and sprinkle with almonds.
