Greek Style Lamb With Orzo
|Ground lamb/Beef||1 Pound|
|Stewed tomatoes||1 Can (10 oz)|
|Stalk celery||1 , cut into 1/2 inch pieces|
|Orzo||1⁄2 Cup (8 tbs)|
|Ground red pepper||1⁄4 Teaspoon|
|Plain yogurt||1 Cup (16 tbs)|
Crumble ground lamb into 2 quart microwavable casserole.
Cover with waxed paper and microwave on high 3 minutes; stir.
Cover with waxed paper and microwave until lamb is no longer pink, 2 to 3 minutes longer; drain.
Stir in remaining ingredients except yogurt.
Cover tightly and microwave 4 minutes; stir.
Cover tightly and microwave, stirring every 2 minutes, until orzo is tender, 8 to 10 minutes longer.
Serve with yogurt.
