Creamy Basil Sauce For Linguine
|Garlic clove||1 Large|
|Cottage cheese||3⁄4 Cup (12 tbs) (Low Fat No Salt Added)|
|Sweet gorgonzola||1 Ounce|
|Basil leaves||1 1⁄4 Cup (20 tbs), lightly packed|
|Ripe tomato||5 Ounce|
|Ground black pepper||To Taste|
|Pine nuts||2 Tablespoon|
Bring 3 quarts water to boil in covered pot.
Add linguine and cook until al dente.
Chop garlic in food processor.
Add the cottage cheese, Gorgonzola and basil and process until smooth.
Add tomato, cut in chunks, and process only until tomatoes are tiny chunks.
Stir in pepper and pine nuts, if used.
When pasta is cooked, drain well and stir into sauce.
