Meatless Spaghetti Sauce

Ingredients
  Eggplant 1 Pound, peeled and cut into 1 inch cubes
  Onion 1 Medium, chopped
  Garlic 2 Clove (10 gm), minced
  Dried parsley flakes 1 Teaspoon
  Canned italian-style tomatoes 16 Ounce
  Canned tomato paste 6 Ounce
  Canned mushrooms 4 Ounce (Undrained)
  Oregano 1 Teaspoon
  Salt 1 1⁄2 Teaspoon
  Sugar 1 Teaspoon
Directions

Combine all ingredients in crock pot; stir well.
Cover and cook on low setting for 10 to 12 hours (on high setting for 2 to 4 hours).
