Pasta With Sausage And Peppers
|Garlic cloves||2 Large, minced|
|Sweet italian sausages||3 (Removed From Their Casings About 1 Pound)|
|Onion||1 Large, sliced|
|Peppers||2 Medium (Use Any Combinations Of Green, Red, Yellow Or Orange)|
|Olive oil||1 Tablespoon|
|Whole tomatoes||1 Can (10 oz)|
|Basil||1 Teaspoon (Dried Or Fresh)|
|Parsley||1 Tablespoon (Dried Or Fresh)|
|Dried chili peppers||To Taste|
|Romano cheese/Parmesan cheese||1 Tablespoon|
|Pasta||1 Pound (Use Your Favorite, I Use Linguini)|
In large pot, combine olive oil, onion and peppers; saute over medium heat until softened, about 5 to 10 minutes.
Add the garlic; stir for about 1 minute.
Do not allow garlic to brown, or it will be bitter.
Add sausage meat, breaking it up as it cooks.
While meat is cooking, add seasonings to your taste, using ones listed above or your own favorites.
Pour tomatoes into large bowl; using 2 knives, chop tomatoes into very small pieces.
Add tomatoes when meat is thoroughly cooked.
Adjust seasonings, if required.
Allow sauce to simmer over medium-low heat for 20 to 30 minutes.
Cook pasta to desired tenderness.
Place pasta in warm serving dish.
Sprinkle pasta with generous amount of Romano or Parmesan cheese.
Top with sauce.
