Tortellini With Coconut Avocado Cream

This tortellini with coconut avocado cream is a sweet and savory appetizer that can be served before a dinner party. Cooked in the microwave, the tortellini with coconut avocado cream is prepaed with avocados blended with coconut milk, lemon juice and tabasco sauce with tomatoes and cheese. poured over tortellini and further cooked, it is ready to serve. Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
  Tortellini 500 Gram
  Ripe avocado 1 Large
  Coconut cream 1⁄4 Cup (4 tbs)
  Peeled tomatoes 425 Gram
  Grated parmesan cheese 1⁄2 Cup (8 tbs)
  Lemon juice 1 Tablespoon
  Tobasco sauce To Taste
  Salt To Taste
  Pepper To Taste
Directions

Place tortellini in a large bowl, cover with hot water.
Cook for 10-12 minutes on HIGH, until tender.
Drain.
Blend avocado, coconut milk, lemon juice, salt and pepper and tabasco sauce until smooth.
Stir in tomatoes and 1/4 cup cheese.
Pour over hot tortellini.
Sprinkle with remaining cheese.
Heat 3-5 minutes on MEDIUM if necessary.
