Penne Primavera With Garlic-Tomato Dressing
|Penne pasta/Other medium tubular pasta||8 Ounce, cooked al dente and well drained in a colander|
|Cauliflower florets||1 Cup (16 tbs), steamed|
|Broccoli florets||1 Cup (16 tbs), steamed|
|Chopped bell pepper||1 Cup (16 tbs) (Yellow Or Red)|
|Low-sodium tomato juice||1 Cup (16 tbs)|
|Ground oregano||1⁄2 Teaspoon|
|Ground basil||1⁄2 Teaspoon|
|Garlic||1 Clove (5 gm), minced|
1. Toss together cooked penne, steamed broccoli and cauliflower, and red bell pepper. Chill for 2 hours.
2. Combine tomato juice, oregano leaves, basil leaves, and garlic.
3. Toss with chilled penne and vegetables.
